Hi Graeme
Rabo de Bol is what you want but i have only seen it in butchers and not in the supermarkets.
Peter
Hi
Yes that's what I've been asking for but nobody
seems to do it - so far??
Thanks
Graeme
Not rabo de bol. Try rabo de boi (pronounced boy). Both Oxtail stew and soup are popular dishes here.
I will ask our butcher tomorrow at the market. However he was unable to let me have beef suet, even though he understood exactly what I meant when I described it. Perhaps beef carcases come to him with bits missing. With pigs it is the opposite and he has on display heads, trotters, cheek (one of the best cuts of pork IMHO) and ears.

He confirmed that butchers who buy their meat direct from the abattoir (as he does) have oxtail. He showed me a bucket containing a cow hoof with a bit of leg attached and some offal.
