know of one garden centre called natura in algarve who used to sell full size trees for replanting - cant think of anyone else sorry

Hi there, for what it's worth, it is the wrong time of year to plant established olive trees, even if you have the ground/planting holes all prepared. The amount of water they would need over the next four months would be considerable. I would suggest waiting until November/December when the soil is still warm but more manageble and the rains can do the watering for you.
